Preparation
Step 1 Grate the cucumber or cut it into very small pieces. Mix with a pinch of salt and set aside. The salt will remove some of the liquid from the cucumber.
Step 2 Chop finely garlic, dill, and mint.
Step 3 Put the cucumber in a sieve and squeeze it lightly.
Step 4 Mix the lemon juice with the soy skyr and stir in the cucumber, herbs and garlic.
Step 5 Season with salt and pepper.
1/4 Cucumber (90 g)
2 Cloves of garlic
5g Fresh dill
5g Fresh mint
2 tsp Lemon juice (10 ml)
250 g Unsweetened soy skyr
Pinch of Salt & Pepper
